Parsnips are uniquely British vegetable that you'll rarely see them grown or for sale in other countries. Makes no sense to me. I think they're delicious, and an essential part of any self respecting roast.

They do take up quite a bit of space in the veg plot for a long period of time, but they're relatively trouble free, sitting contentedly in the ground through the winter until you need them. The winter frosts will actually improve their flavour by converting the stored starches into sugars that will caramelise beautifully on roasting.

Tender and True was created back in 1897, and remains hugely popular today for its refined quality, smooth white flesh and long roots.
